Also known as flapjacks or griddle cakes, this pancake recipe will yeild about six fluffy pancakes - depending upon the size. This breakfast staple can be flavoured in many ways but you won't need to go to IHOP (International House of Pancakes) to enjoy this easy to make, family favourite.

To make this pancake recipe you will need:
* 2 mixing bowls
* a fork to beat the egg (a whip would be a nice extra)
* a wood mixing spoon
* a ladel (or other utensil to dispense batter into the pan)
* a pan or griddle
The required ingredients for this pancake recipe are:
* 1 large egg - lightly beaten
* 1 cup milk
* 1/4 teaspoon vanilla
* 1 cup flour
* 1 tablespoon baking powder
* 1/2 teaspoon salt
* 1 teaspoon melted butter
* butter (or other fat) for frying pancakes

Method: * Combine lightly beaten egg with milk and vanilla and mix well * In a separate bowl combine flour, salt and baking powder until fully blended * Combine wet and dry ingredients stirring, with a wooden spoon, only until ingredients are blended * Stir in melted butter only until blended * Fry pancakes, in sufficient butter to prevent sticking, on medium-low heat turning (only once) when top starts to bubble To serve all at once, keep your pancakes hot in the oven on low heat until all are ready. |
A little Pancake recipe tip: Your pancakes can be flavoured with any
number of ingredients. Slice a couple of mushrooms or your favourite apple to
approximately 1/8 inch thick - 3/8" inch squared and gently stir them in
... OR add a tablespoon of maple syrup. (When adding apple, we like snappy
granny smiths to add to pancakes.) 1/3 Cup of blueberries are also a very nice
option. Try out your favourites.
*Remember - don't over mix your batter. Stir in any final additions very
gently.
