Pickled eggs are an easy to make treat. We don't purport to know much about them except that they are traditional pub fare and that they pack an excellent, high quality protien punch when you need one! Today we pick even our eggs fairly carefully.
We recently began using lutein enhanced eggs from cage free hens fed on a purely vegetarian diet. Lutein is an antioxidant carotenoid containing omega 3 polyunsaturated fats and vitamin E. It is suspected that luteins may offer some protection against age related macular degeneration (it's good for your eyes). Lutein, in the eggs we buy, are introduced by adding marigold extract to the feed. In proper amounts, eggs are a wonderful part of a healthy diet.
Now let's pickle some eggs!
To make this pickled egg recipe you will need:
* a pot with a lid in which to boil your eggs
* a pot to prepare your "pickle juice".
* a sterilized, one litre (one quart) bottle with cap
The required ingredients for this pickled egg recipe are:
* 12 large eggs
* 1 1/2 cup white vinegar
* 1 1/2 cup water
* 1 tablespoon pickling spice
* 1 bay leaf
* 1 clove garlic - crushed

Method: * Put your eggs on to boil * In a second pot mix the water, vinegar and pickling spice With about five (5) minutes cooking time left for your eggs, start your pot
of pickle mix to cooking Note: Your eggs should sit in the refridgerator for about two weeks prior to consuming. By the time the eggs are eaten the garlic will have softened in texture and flavour and makes a nice little treat. (By the way, some people like their Chopped Egg Salad made with pickled egg (though I wouldn't use paprika in a pickled chopped egg salad). An energy saving tip for boiling eggs: place your eggs in a pot and cover them with water. Put a lid on the pot. Bring the water (with eggs in) to a full boil. Turn the burner off. Let the eggs sit in the water for 13 minutes - leave the pot covered. If you like a slightly softer hard boiled egg leave them in the water for 12 minutes. Experience will teach you how long to leave your eggs in the water to achieve your prefered level of "hardness".
